I know exactly what you're talking about (but i don't expect a dictionary entry for a hummed response). Mmm bye was most likely said because bye is too abrupt, so mmm can act as a filler—for just the right amount of time—which makes bye softer/more gentle.
Mmm isn’t really onomatopoeia, as @kristina indirectly points out. I'm working with an interview transcript and i have a participant who says 'hmmm?' in a way that i want to discuss. Onomatopoeia is imitation, more specifically mimicking, and mmm doesn’t really mimick anything. 3 i'm just looking for a word by which one can explain the moment / feeling / act of closing your eyes and chewing your food slowly with taking enjoying every part of your food.
